We use both manual, traditional, and gentle harvesting, as well as the most modern mechanical methods. With manual harvesting, the olives are picked one by one or with small combs, ensuring intact fruit and preserving the natural aroma. Mechanical shakers and combs allow harvesting to be sped up without damaging the fruit, combining efficiency with care. In any case, the olives are picked at the right time and quickly transported to the mill to preserve freshness and quality.
Our olives are processed using the cold milling technique, which keeps the temperature below 27 °C. This delicate process allows us to extract an oil rich in aromas, polyphenols, and vitamins, preserving all the natural characteristics of the fruit. Cold crushing and malaxation enhance the fragrance and taste, while centrifugation extraction ensures a pure, balanced, and aromatic extra virgin oil. The result is an oil that can be recognized at first taste: fruity, harmonious, with notes of fresh grass, artichoke, and almond.
To bring our oil directly to your table, we also package it in 5-liter food-grade cans, ideal for those who use oil regularly in cooking or for the restaurant industry.
